The great TACO GATO adventure began in the unprecedented summer of 2020. Chef / Co-Founder Kelvin Ramirez found himself faced with uncertainty as he watched restaurants and bars continue to close their doors. At the same time, fellow Worcesterite Keith Sullivan was scrambling to keep Medusa Brewing Co. in Hudson, MA up and running, despite the pandemic’s restrictions on the food and beverage scene. As Co-Owner of the brewery, he and his team built a large outdoor beer garden on company-owned land that abutted the small taproom. Outfitted with seating for up to 200, beautiful artwork, and an amazing music program, all that it needed was some delicious eats! CUE TACO GATO!

Battling through the heat of the summer, thunder storms, wind, and the rest of the elements, TACO GATO emerged as a small, outdoor taco stand in Medusa’s beer garden. Partnered with Keith Sullivan and Tom Sutter of Medusa, Kelvin began raining tacos on Hudson for the remainder of the summer.
